Rinse, drain and dry the chickpeas. 2. Melt the coconut oil in a roasting tray and add the chickpeas with the spices and seasoning. 3. Make sure the chickpeas are fully covered and roast for 30-40 minutes, checking on them every 10 minutes and shake them around so they're cooked evenly. Raw Chocolate and Orange Energy Balls 10 Medjool Dates, pitted 1 cup Unsalted Cashews Zest of 1 Orange 3 tbsp Orange Juice 2 tbsp Cacao Powder Optional - 1/4 cup Hemp Powder 1. Add all of the ingredients to a food processor and blend until the mixture sticks together. 2. Take 1 tbsp at a time and roll into energy balls. 3. Keep in an airtight container in the fridge until you travel. Vegetable Crudités 1/4 Cucumber 1 Carrot 1 Red Pepper 1. Slice into strips. 2. I set off for Chinese street food and cuisine in deep southern Sichuan province by bicycle. I rode my bike down deep into Southern China's lush and mountainous liangshan region, in search of delicious Chinese street food and Chinese food. The Chinese food really was different in this region. The liangshan region is home to Chinese Yi ethnic minority, who have their own cuisine. It was very rural and in some areas also very poor, so I had difficulty finding the yi cuisine at first. Later in the second half of the video, I found a Yi restaurant and had a Chinese food feast! The little village I visited was called Butuo, about 120 km from Xichang. Another Day, Another Dollar documentary was intended not as much as a look into life on a dollar a day, as much as a showcase on how to be content on less, and how life is like for us and others in Nepal. The documentary was originally divided in 4 parts, uploaded in November 2015, with a total time of about 45 minutes. The Rules So we came from the angle of already living here, not starting fresh. Locals living on very little already have a home, basic resources, maybe a bicycle or a motorbike for the family. Before we embarked on this challenge, we had to set some ground rules, and we will make things as transparent as possible for you. First up, keep in mind this does not include our visa costs, internet, or rent. Our visa is an expense locals don’t have but we need to pay as foreigners. And we were forced to get Internet ever since YouTube started refusing the submission of VHS tapes for video uploads. Not impressed, YouTube. Secondly, we chose a high exchange rate to use for the Nepali rupee against the American dollar, so we will be working with 107rps each/day as an average, although for simplicities sake, you can think of 100 rupees as one dollar or 100 cents. We will do it for a whole month with no breaks, meaning our budget as a couple is $60 for the month, or 6420 rps. This is around 20% less than one person earning minimum wage would make. Over 30 per cent of Nepalese live on less than US$14 per person, per month, according to the national living standards survey conducted in 2010-2011.The average daily income in Nepal is closer to $2 a day. Having said that, if we were to spend the average income during this challenge, we would have no problem paying for our rent as well. Keep in mind, though, many local families already own the family home and don’t have to pay rent. Our living on a dollar is not only our food. No, that would be too easy. It includes cosmetics, shampoo, soap, laundry detergent, vehicle repairs, and any medicine we might need. We are also using cooking gas, which costs about 8cents a day. Many people especially in the rurals don’t use cooking gas, but use wood fires instead for cooking, which if we were to do also would make it a lot easier to keep in budget. But easy is for losers. Just kidding… Since the documentary, we have been forced to cook on wood, and it is not “easy,” but time consuming. It does save about $4/month doing it that way though. But I’d rather pay for the gas in most cases. To make it easier to calculate our expenses, we put away lots of our stuff that we bought already to start fresh for the month and not get confused or tempted into using something we already bought before. As we considered what we need to spend on non-food items, we came to realize that this was more of a challenge than anticipated. Blah. Our Budget Not only did we stay in budget, but in 30 days we spent an average of $0.85 per day. As we were going according to the Nepali calendar of 32 days for that month of Saun, though, the money we saved allowed us to treat ourselves to a trip and nice meal for the last 2 days when we went to Sauraha, and Chitwan National Park. I found a ton of street food and specialty halal snacks. Lanzhou is in the northwest of China, close to the far west Xinjiang province, and is home of the Hui people, and the food is fantastic! There was a lot of Chinese street food and Islam muslim Chinese cuisine. Just like you, I love street food around the world, and I travel for food. I came here to eat! Street food in China is something I'm always looking to find more of! So I flew to Lanzhou, China and have been trying Chinese Muslim Hui Halal Street food non stop. Best Street Food in China I've tasted! The Chinese food is so good in Lanzhou! I've eaten street food in Bejing, street food in Shanghai, street food in Chengdu, and street food in Hong Kong, all of which has been amazing, but I have to say that the chinese street food in Lanzhou has been some of the best! When you think of China, you probably don't think of Islam and Halal food, but that's exactly what you'll find in the Northwest. I made my way for a food trip to the dusty and bustling classic Silk Road city of Lanzhou specifically to try the unique halal food of the Hui people. This is the side of China not many people see, and I came here to have an authentic travel experience through food. I found a lot of food reminiscent of countries further west, with insane amounts of lamb and beef leaving me absolutely speechless. Barcelona is an amazing food city, and one of the best places to start eating is at La Boqueria. After eating and wandering, we headed over to Sagrada Família for a breathtaking tour. It was an amazing day of food and attractions in Barcelona. 00:34 Breakfast at Cotton House Hotel - We started off the morning at our hotel by having a quick breakfast. The jamon and selection of cured meats was the highlight. 2:53 Mercat de Sant Josep de la Boqueria - Often known in short just as La Boqueria, this historical market is a food lover's paradise and a pilgrimage destination. We arrived early in the morning and headed first to Bar Pinotxo to eat our second breakfast. I ordered an omelet with eggplant and a plate of garbanzo beans and blood sausage. The dish was simple, but it was incredibly delicious. Additionally, the coffee was extremely good. Total price - 12.80 EUR ($14.04) 6:59 El Quim De La Boqueria - After finishing with the first place of tapas, I wandered over to another legendary tapas bar within La Boqueria market known as El Quim De La Boqueria. It’s a very expensive place, but I knew I wanted to try the fried eggs with baby squid. The dish was a simple combination of ingredients, but it was cooked perfectly, and it was incredibly delicious. I also couldn’t resist a plate of fried chilies. Total price - 32.05 EUR ($35.16) There are dozens of things to eat and try at La Boqueria, and after all the salty food I was ready to have a passion fruit juice. And then finally, to conclude the Barcelona food tour of La Boqueria, I bought a cone of sliced Jamón Ibérico. 14:14 Gothic Quarter, Barcelona Cathedral - After an amazing food tour, we walked around the Christopher Columbus monument and then continued on walking around the Gothic Quarter of Barcelona. The Barcelona Cathedral was originally closed when we arrived, but I came back in a few minutes and walked around the Barcelona Cathedral as well. 16:37 Xarcutería La Pineda - Located just around the corner from the Barcelona Cathedral, I headed over to a place called Xarcutería La Pineda (recommended by Chris English), to try the botifarra blanca and a cup of vermouth. It’s an amazing little family run shop with a fantastic array of meats and drinks. Total price - 11.50 EUR 21:25 Basílica de la Sagrada Família - One of the most famous attractions in Barcelona is the Sagrada Familia, a basilica that was famous designed by Antoni Gaudi. I had read and dreamed about visiting for many years, so I was very excited to finally have the chance to visit. What amazed me is how dark and gothic it looks from the outside, yet how light and happy it is on the inside. Sagrada Familia is truly a stunning architectural feat, and an attraction you must visit in Barcelona. Along with visiting the main part of Sagrada Familia, I also bought tickets to go to the Nativity Tower. Going to the top of the tower and walking down was the highlight of visiting. Price - 29.00 EUR per person w/ tower entrance 26:16 Catalan Food for dinner at Restaurant Portolés - For dinner Ying and I walked over to Restaurant Portolés, a local Catalan food restaurant. Some of the main dishes I ordered included Fideuà and Rollitos De Pollo, all of which were delicious. It’s a great restaurant to try in Barcelona. Total price - 26.50 EUR This was a fantastic day in Barcelona, packed with delicious food and attractions in Barcelona. Uzbekistan: a travel documentary

After visiting Mongolia last Summer, we decided to explore a little further the Silk Road and picked Uzbekistan as our next destination. We didn't really know what to expect: different sources gave us different opinions and we were unsure of what it would have been like. We found a country full of architectural beauty, a lot of tradition, amazing food and colours. Still quite genuine, tourism hasn't spoiled it that much yet ... unfortunately looked like only big groups of people in their 50s/60s are willing to travel to this country. It is affordable and it is suitable for both solo travellers, women, families and, of course, groups of any age. Tashkent: it's the capital city and one of the largest cities in Central Asia. Worth a quick stop but don't spend too much time. The gardens and parks around the presidential buildings are very enjoyable and well maintained. Near the Chorsu Bazaar is the best part of town both because of the few remaining historical buildings are around, as well as for the market itself. Samarkand: do not underestimate the distance here if you are on foot. It's truly impressive to stand in front of the Registan and look at the magnificent madrasas. It's indeed one of the most impressive square in the World. But even more impressive and fascinating is the Shah-I-Zinda mausoleum. The Bibi Khanyum Mosque is the third landmark and can't be missed. Two other documents are less appealing (unless you are an archeologist or an historian) but are still worth a visit: the Afrosiab ruins and the Ulug Beg observatory. Samarkand's history starts probably 3 millennia ago. The old Marqand was conquered by Alexander the Great. The it flourished as one of the major trading points along the Silk Road under the Sogdians and the Persians. When the arabs came in the region, it continue flourishing and its grandeur survived also the Mongol invasion. Infact, not long thereafter, it was the capital of the Timurid Empire that dominated Central Asia from Turkey to India at the end of the 14th century Bukhara: different from Samarkand, Bukhara landmarks are less impressive but the entire historical center has been kept almost intact. People still live in the old town and enjoy the evening at the Lyabi Hauz. Bukhara will also give you a taste not only of the Silk Road, but also of the Great Game. The Ark fortress has impressive walls, but the madrasas here are the most interest. Our favourite has been the Abdullah Khan Madrasa. Khiva: the old citadel of Khiva (the so-called Ichon Qala) is on the UNESCO World Heritage List. So many monuments are packed within it walls: 2 royal palace, 3 minarets and several mosques and madrasas. Khiva may see a museum for tourists during the day, but in reality has its own soul. You can feel it early morning of after sunset, before the tourists hit the road or by the weddings that took place every day on its streets. PRACTICAL INFO: Itinerary: we spent 10 days: 1 day in Tashkent, 2 days in Samarkand, 1.5 in Bukhara, 1.5 day in the Khorzem, 3 in Khiva and 1 day to come back to Tashkent. It gives you ample time. Ex-post, we only made an error to dedicate only one and half day to Bukhara as we were unable to see the monuments in the countryside Flights: direct flights from London with Uzbekistan Airways. 7 hours for £400 with no flight entertainment Transport: train is perfect. We had a travel agency (Salom Travel) booking for us the tickets in advance and delivering to our hotel in Tashkent. In addition, you need a tour or a driver to visit the Khorzem fortresses. We also relied on the same agency. We highly recommend Salom Travel Food: amazing food for max $5 per person. We ate a lot at the kiosks in the various bazaar for much less than that. Everything is very tasteful, not only the meat, but also the vegs, the dumplings and the local spaghetti (nothing to do with Chinese noodles) Safety: super safe Locals: extremely friendly. Especially the younger, they will try to exchange a word or two in English. Uzbekistan is very isolated and not many foreigners are around. As result locals have not been westernized. E.g. all women still wear traditional dresses and you won't hear Justin Bibier around but rather Russian songs or Uzber traditional music. Some taxi drivers and ticket officers will try to squeeze a couple of dollars out of you but nothing that will bore you too much

We stopped at a restaurant called Noor Mohammadi for a stunning dish called nalli nihari, and then had one of the most fascinating Mumbai street food sandwiches I’ve ever seen. It was a great day of food in Mumbai! 1:27 Crawford Market (Mahatma Jyotiba Phule Mandai) - We started off the morning by walking around what’s known as Crawford Market. The market is indoor and there’s just about anything you can imagine for sale from food to household supplies. 3:55 Noor Mohammadi Hotel (Restaurant) - This restaurants was one of the highlights of this day in Mumbai, and we came here specifically to eat a hardcore non-veg dish called nalli nihari. Typically in India the dish is made from buffalo and it includes bone marrow in the stew as well. It was incredibly oily and fatty, but also incredibly delicious. It was like richness on top of richness, and every single bite of the nalli nihari was worth it. The nalli nihari was especially good with the tandoori roti. 9:05 Bhendi Bazaar - After enjoying the nalli nihari, we then took a walk through Bhendi Bazaar, another action packed street market in Mumbai. There’s always something going on at Bhendi Bazaar, and some kind of action taking place. 10:30 Mumbai sandwich (Bombay sandwich) - When I spotted a man making sandwiches, I couldn’t wait to try it. Known commonly as the Bombay veg or Bombay chutney sandwich, but now also called the Mumbai sandwich, this is a favorite street food snack in Mumbai. You don’t normally think of sandwiches when you think of Indian food, but there are countless sandwich stalls in Mumbai. In contrast to the non-vegetarian dish I had previously, this Mumbai sandwich was vegetarian, and I got a mix of all the toppings, including tomato, onion, beetroot, cucumber, and cheese, all layered with chutney, and grilled in a fire. The sandwich was quite tasty, especially in a large part because of the different chutneys. 14:20 Haji Ali Juice Center / Haji Ali Dargah - Next we took a taxi over to Haji Ali Dargah (mosque), and had a juice at the legendary Haji Ali Juice Center. Unfortunately when we visited Haji Ali Mosque, the ocean tide was too high, so couldn’t walk to it. 16:46 Mount Mary Church - We then headed to Bandra and first stopped off at Mount Mary Church, one of the most famous basilica’s in Mumbai. 17:39 Castella de Aguada - Next we went to walk around Castella de Aguada, an old Portuguese fort, that’s now more like a park and a popular hangout spot. 19:00 Elco Restaurant - Since we were in the area, for snack we went to Elco and to have some chaat. We tried sev puri and dahi puri, both of which were very good, and it was nice to get some AC and relaxation indoors for a little while. 20:50 Milk dessert - While we were walking around Myron spotted a cart selling a type of milk dessert made from the first milk (colostrum). It was indeed very interesting. 22:16 Jai Jawan (Khar branch) - Finally for dinner, out last stop of the day, we walked over to a restaurant called Jai Jawan to eat their prawns fry and tandoori chicken. Dinner was amazing, Jai Jawan is a fantastic restaurant. We started with Turkish breakfast, followed by the famous fish bread sandwich (balik ekmek), followed by kokoreç and midye dolma, and then finally for dinner I ate lahmacun. Although everything was good in this Istanbul food tour, my favorite food of the day was the kokoreç. 00:41 Lades Menemen Restaurant - The first meal on this Turkish food tour was for Turkish breakfast just off Istiklal street. Along with some side dishes, my main order was menemen, which is a type of Turkish egg dish (similar to scrambled eggs) and I got it with Turkish sausage. It came piping hot and bubbling away, and it was extraordinarily delicious, especially with all the other sides. Total price - 34 TL ($11.43) for everything 4:56 Galata Tower - 25 TL ($8.40) per person - On this food tour, we still had to do a little bit of sightseeing, so on our way to the next restaurant, we stopped off at the Galata Tower for an amazing full 360 view of Istanbul. We got there right as they opened, so it was nice and quiet. Galata Bridge, Eminönü, Balık Ekmek - Perhaps one of the most well known Istanbul street foods is, balık ekmek, a fish bread sandwich. Located in Eminönü, and along the water's edge, you’ll find a handful of boats that grill up pieces of mackerel, stuff them into bread, and serve them with lemon juice. You can sit along the pier, and enjoy your fish bread sandwich, and not only is it good, but the atmosphere is also fantastic. Balik Ekmek (fish sandwich) - 8 TL ($2.69) 10:56 Spice Bazaar (Egyptian Bazaar) - If I could choose one of my favorite things to do in Istanbul, it would be exploring the Spice Bazaar which is also known as the Egyptian Bazaar. You’ll find an incredible amount of spices and herbs and flavoring ingredients from around the world, packed into the market. After walking around for a while, Ying and I decided to buy some cherries, and the friendly vendor also gave us some samples of fruit as well. Cherries - 1 kg. for 12 TL ($4.03) 13:35 Süleymaniye Mosque - We were in the general area, so we stopped in at Süleymaniye Mosque, an iconic mosque in Istanbul that dominates the skyline. 15:21 Kral Kokoreç - The next food on this Istanbul food tour is kokoreç, and it’s one of the Turkish foods I was most looking forward to eating in Istanbul. Kral Kokoreç is an amazing, sort of street food stall in Istanbul. Kokoreç is a delicacy of organs wrapped in lamb intestines and grilled. I ordered a plate of it to go alongside some bread and it was spectacular. It was one of the best Turkish food meals I had, I loved it. They also sold midye dolma, mussels with rice and spices, and they were also wonderful. Total price - 29 TL ($9.71) - for everything. 22:42 Grand Bazaar - After that amazing meal, we walked over to the Grand Bazaar, which is not only one of the oldest covered markets in Istanbul, but one of the oldest covered shopping areas in the world. It was pretty amazing to walk around, and admire the shops and the actual structure of the Grand Bazaar in Istanbul. I think the tea was 1 TL ($0.34). 25:47 Fıstık Kebap Lahmacun - To complete this Istanbul food tour, our final stop for dinner was at a restaurant called Fıstık Kebap Lahmacun (thanks to Culinary Backstreets for the recommendation: http://culinarybackstreets.com/cities-category/istanbul/2013/top-3-lahmacun/) to eat lahmacun. At first we started off with aryan and kibbeh, before proceeding onto the lahmacun, pide, and the special fistik kebap. Everything was delicious, but I think I really liked the simplicity and lightness of the lahmacun the best. Total price - 58 TL ($19.49). But now I'm here, in Chengdu, Sichuan, at the Sichuan Higher Institue of Cuisine on a 2 year+ 1 year internship to being a Sichuan chef. I just dropped out of my masters in international trade to come here. This is what I really want to do, and I’ll be sharing journey of becoming a Sichuan cook with you. After living in Asia 3 years and being completely spoiled by the abundance of delicious and cheap street food in China, Malaysia, Thailand, Turkey, and India I’ve had no incentive to cook. It’s so easy and fun to hit the street and eat new food all the time, so I honestly think in 3 years, I’ve cooked less than 10 meals for myself. As I explored the Shanghai food scene last month, It dawned on me as I was about to enter my 3rd semester at the economics school here in Sichuan that I was studying there for no reason, what I really wanted to do is continue to create content and resources for YOU, through videos and text. I was merely studying there because I thought it was a good backup plan if foodrangin’ failed. But now I feel confident it won’t. I realized that I’m really good at eating, decent at producing videos and planning them out, alright at describing flavours, but, I can’t back it up with culinary skills. Over the last 2 years I’ve been bothered by this, until I recently watched the classic Julie and Julia and learned that even Julia Child herself couldn’t cook an egg when she entered the cordon bleu in France. So here we go, I’m going full in. I’m 100% committed to this. I’m going to learn to cook Sichuan cuisine, and it’s all starting here. This is the beginning of my new journey. And I want you to follow along with me. I had an insane first few days at school, and as you can see, my skills are not there, but I’m going to keep a positive mind through all the times I stumble and mess up and really do my best to learn and create some delicious food.
