Give these ingredients a minute head start and then add the garlic and salt. Cook until the onion begins to soften and then add the tomato paste. Push the paste around with the vegetables—spread it around the bottom of the pan and let it cook up a minute or two—if the paste sticks a little, that's cool—because now we'll add white wine which will deglaze any stuck on paste. Stir. Add a bay leaf, oregano, thyme, basil—throw some red pepper flakes in as well if you like it hot. Let the mix simmer for about 5 minutes. Add diced tomatoes, 1 cup of broth (I use chicken broth, but any broth will do), and 2 cups of water—you can substitute 1 cup of clam juice for 1 of the cups of water, if desired. Bring to a boil and then reduce to a simmer, cover, and allow to cook 30 minutes. After 30 minutes, add 1 lb. of miscellaneous seafood—a variety of big-bite pieces make a nice presentation. Cover and simmer for another 7-8 minutes. Stir in some lemon juice and remove from heat and serve. It looks tasty in a bowl with a nice pyramid of rice in the middle. it's easy peezey and puts a nice glow in your belly. Bon appétit!

For the cooking demo, C-CAP alumnae Sabrina Forte and Kenia Casteaneda helped Chef Trani and Chef Johnson, respectively, to create the following two dishes with frozen fresh Alaska Pacific cod and Alaska sockeye salmon processed and distributed by Santa Monica Seafood. Students had the opportunity to learn about two species of Alaska seafood, how to best care for and prepare frozen fresh seafood, along with tips about dish development, plating, and dish presentation. Seafood Spaghetti Recipe, The Yes Chef (Ep1)
A little bit more of the 'YES I CAN!' attitude is all that's needed to make delicious meals everyday of the week! In this episode Tess Ward is making a quick and easy Seafood Spaghetti... Made in the time it takes to boil your pasta! Ingredients 1. 60g dried Spaghetti 2. 200g cooked Mixed Seafood 3. 1 clove of Garlic 4. 1 Anchovy Fillet (and a little of the marinade oil) 5. 200g chopped Tomatoes 6. Zest of 1 Orange 7. 50ml White Wine 8. 2 tbs Olive Oil 9. 1 tbs Fresh Parsley Method Cook the Spaghetti according to packet instruction in plenty of boiling salted water Whilst the Spaghetti is cooking, finely chop the Garlic and Anchovy. Get a frying pan on the hob over a medium heat. Add the Olive Oil, the Garlic, Anchovy to the pan, and cook for a minute. Grate the zest of the Orange straight into the pan and fry for a further minute or two until the Garlic has turned golden. De-glaze the pan with the White Wine then add the chopped Tomatoes. Bring the Tomato Sauce to the boil then add the Seafood and season with salt and pepper. Check the Spaghetti is cooked then drain using a colander, reserving a little of the cooking water. Add the Spaghetti back to the pan it was cooked in and pour in the Seafood Sauce. Gently toss the Sauce in with the Spaghetti and divide between two bowls. Whisk to make a smooth cream sauce. Thaw the shrimp in cold water and sear the scallops in a non stick pan sprayed with cooking spray. When scallops are cooked through, remove from heat and cut into quarters. Add the shrimp, scallops, and can of crab to the cream sauce. Set aside. Thaw the frozen rapini or spinach and drain well. In another bowl, mix together the rapini or spinach, cottage cheese, and egg. Preheat oven to 350 and spray a lasagna pan with cooking spray. Layer 3-4 lasagna noodles in your lasagna pan. Spread with a layer of half the cottage cheese mixture. Then spread with a layer of 1/2 the seafood cream sauce mixture, and cover with 1/2 the package of shredded cheese. Repeat steps above ending with the seafood mixture and covering with the remaining cheese. Can be double wrapped, and frozen at this point. If baking from frozen, thaw lasagna overnight in refrigerator before it goes in oven. Bake in a 350 oven for 60 minutes until the cheese is golden and bubbly. Let rest on counter for 20 minutes before serving to give it a chance to set.

The innovation set the stage for the founding of SeaPak Shrimp & Seafood Co., which today markets America's No. 1-selling retail brand of specialty shrimp. Prior to World War II, Americans primarily ate foods grown locally and regionally, because there were very few products that could be packed and shipped to distant locations and remain fresh. People who did not live near coastal waterways generally were unable to enjoy seafood such as shrimp, crab, and oysters. Sea Island Packing Company began overcoming this seafood distribution obstacle in late 1948, when it launched operations on the grounds of a former naval training base on Georgia's St. Simons Island. The company immediately began utilizing a converted naval cold-storage freezer to experiment with different methods of freezing locally caught shrimp. Within a year, Sea Island Packing Company had developed an Individual Quick Freezing (IQF) process, which "flash freezes" each shrimp to lock in its original state of freshness. Shortly after pioneering this revolutionary new technique, Sea Island Packing Company changed its name to SeaPak Corporation. SeaPak Corporation used the new IQF technology to launch an exciting new product: peeled, deveined, and quick-frozen shrimp. Later, the company added other new products, including raw, breaded shrimp, fish sticks, and fish portions. The rapidly growing business began marketing its line of frozen seafood throughout the Southeast, yet SeaPak still was unable to keep up with nationwide demand. Many grocers did not have large, cold-storage freezers to store the newly developed frozen products. In addition to the grocers' limited freezer space, there weren't even enough refrigerated trucks available to transport the products to grocery stores. SeaPak management then formed Aero Foods to help reach frozen-food aisles everywhere. Using the runways next door that the U.S. Navy operated for pilot training during the war, Aero Foods was able to deliver frozen SeaPak products by air directly to grocers in far-off locales. Soon, consumers all over the country were enjoying delicious frozen shrimp. In 1976, Rich Products Corporation, based in Buffalo, NY, acquired SeaPak Shrimp & Seafood Co. Rich's was already one of the nation's largest frozen-food processing companies, and the acquisition of SeaPak increased its product portfolio by impressive proportions.
