Clam Chowder: Creamy Southern Goodness done Meso Style of course. Perfect for fall/winter weather. Grab yourself some oyster crackers or any other cracker that you like. New England Style Clam Chowder: Meso Creamy Southern Goodness ENJOY! New England Style Clam Chowder Meso Making It 6 Cups Diced Potatoes 1 Cup Frozen Corn (fresh is better) 3 tbsp. Butter ¾ Cup Flour (any kind) 1 Cup Chopped Celery 1 Cup Chopped Onion 2 tbsp. Mince Garlic 1 & ½ tsp. Salt Pepper to taste 1 tbsp. Old Bay Seasoning Zest of 1 lemon and it’s juice (optional) 32 oz. Veg., Chicken or Seafood Broth 1 Can Evaporated Milk (or any kind) 1 Can Coconut Milk 3 Cans Minced Clams (do not drain) From “NO” Water to 6 Cups of Water (depending on how thick you want yours. Also add more or less of any other ingredient that you like or don't like. (for example: 2 cups corn instead of 1. Place butter in pot and melt, add the flour and whisk well. When smooth, add broth 2 cups at a time until 32 oz. container is empty. Then add milk and coconut milk while stirring. Add water, chicken, veggie or seafood stock/broth to create desired thickness (I used 6 cups). Next, add veggies including potatoes, then the condiments (salt, pepper, garlic, lemon zest, old bay … etc). Cook on med. – med. high for 15 to 20 minutes. Add clams and cook 10 more minutes. Lower heat if needed. Garnish with chives, parsley and bacon if desired. Serve

New England/Key West/San Francisco Style Fish Chowder. Today I made a triple destination based fish chowder taking influences from New England, San Francisco, and Key west. The base was a New England Style Chowder, using Key West Yellowtail Snapper, and adding a San Francisco twist by serving it in a sourdough bread bowl. Ingredients: Bacon - two slices Yellow Onion - one Celery - two stalks Carrots - equivalent to celery Potatoes - three medium Chicken stock - one can Water - one can Fish Filets - add as much as you want to reach consistency. Butter - half a stick Flour - two tablespoons Heavy Cream - One small container Sour Dough Bread - Bowl sized Rounds Brown the bacon in a large pot. Remove half for toppings. Leave the renderings. Add onion, celery, and carrots. Cook only until soft. You do not want carmelization. Add the potatoes and get them heated up and started cooking. Constantly mixing. Add the chicken stock and water. Take to boil and simmer until the potatoes are moderately soft (able to cut with a little tension). Add the fish filet chunks. Cook until the fish is cooked through. Turn off heat and add rue mixture made from melted butter, flour, and heavy cream. Slowly fold in rue mixture and any remaining cream. Cut the top off of Sourdough round. Dig out the bread in the center. Scoop and fill the bowl until full. Sprinkle bacon bits on top. Serve. Samuel Adams New England IPA clocks in at 6.8% ABV and is described by the brewery as follows: "The slight sweetness is perfectly balanced by the pineapple and grapefruit hop character, without being overly bitter. Clocking in at 6.8% ABV and a low 35 IBUs, the unfiltered IPA provides a burst of fruited hop aroma and leaves drinkers wanting another sip. In comparison to West Coast style IPAs which have prominent hop bitterness and a light, dry mouthfeel, New England IPA’s are generally known for a juicy, luscious mouthfeel and opaque, hazy appearance - and are best enjoyed fresh." This description of Samuel Adams New England IPA sounds quite nice. Let's see if the beer lives up to the promise of the prose. Hope you enjoy the show, my written review and report card follows: Samuel Adams New England IPA WRITTEN REVIEW: A - Samuel Adams New England IPA pours a super hazy amber burnt orange hue with a one finger head that leaves nice lacing and a thin ring of bubbles at the edge of the glass. Alcohol legs cling to the glass when the beer is swirled. S - Juicy hops, citrus, tropical notes like pineapple and mango mix with a bit of pine to round out the nose. Is a mixture of sweet tropical fruits dominated by orange juice citrus flavor paired with a dank undertone. No alcohol is detectable in the aroma. T - Taste follows the nose to a (T). After being greeted by juicy hops, citrus, and tropical notes like pineapple, mango and citrus fruits mixed with pine round out the nose. Is a mixture dominant orange juice flavor complimented by sweet tropical fruit notes paired very well with a dank undertone. The only detractor is a taste of stale crackers in the backend. This flavor builds while drinking. The alcohol is also totally hidden in this brew. M - Mouthfeel is medium-full, crisp, refreshing with super smooth carbonation. The beer goes down easy. O - Samuel Adams New England IPA is a decent attempt at juicy hop flavor manipulation. It jhas all the flavors you expect in a NEIPA, but the detractor is a taste of stale crackers in the backend. This flavor builds while drinking.. Samuel Adams New England IPA is a beer that I would drink again but not necessarily seek out.
