Chicken Kalmi Kebab Ingredients Chicken leg - 6 no Salt Lemon - 1 no Turmeric powder - 1/2 tsp Chili powder - 2 tsp Cinnamon CLoves Cardamom Peppercorns - 1/4 tsp Coriander seeds - 1 tsp Cumin powder - 1 tbsp Cashew nuts - 10 no Roasted Chana Dal - 1 tbsp Ginger garlic paste - 2 tsp Curd - 1 cup Ghee - 1 tsp Oil - 1 tsp Method: 1. Take 6 legs of chicken in a glass bowl, prick the chicken pieces from all the sides with a fork. 2. For the first marinade. Add salt, juice of 1 lemon, 1/2 tsp of turmeric powder, 2 tsp of chili powder into the chicken pieces. Rub it well with the chicken pieces and let this sit for 15 minutes. 3. For the second marinade. Take a wide saucepan, dry roast cinnamon, cloves, cardamom, 1/4 tsp of whole peppercorns, 1 tsp of coriander seeds, 1 tbsp of cumin seeds, 10 cashew nuts, 1 tbsp of roasted chana dal. 4. Dry roast on a medium flame for 5 minutes to golden colour. Cool the mixture and grind to the powder. Now, add 2 tsp of ginger garlic paste and 1 cup of curd and grind it all together to paste. 5. Pour the paste to marinated chicken pieces and rub it well. 6. Close the bowl with a cling wrap and refrigerate for a minimum of 4 hours or overnight (8 to 12 hours). 7. Now, take a wide saucepan, add 1 tsp of ghee and 1 tsp of oil. 8. Gently place the marinated chicken pieces into the pan. Keep the flame on low. Cook for 5 minutes and flip the legs to another side. Now, pour the marinade on chicken pieces. Close and cook for 15 to 20 minutes. 9. While it is cooking, after 7 minutes, flip it to other side and close it and cook again. 10. Slow cook the chicken for 30 minutes till it becomes dry. Chicken Kalmi Kebab is ready to be served Murgh Malai kebab Ingredients Chicken - 250 gms Ginger Garlic Paste- 1 Tsp White pepper - 1/2 tsp Garam masala - 1 tsp Green Chili - 2 nos Hung/Thick Curd - 1/2 cup Fresh Cream - 1/4 cup lemon - 1 no Coriander Leaves Butter Salt - 1 Tsp Method: Marinating the chicken 1. In a mixing bowl add chicken, lemon juice, ginger garlic paste, white pepper powder, salt, garam masala powder, green chili, coriander leaves, hung curd and fresh cream. 2. Mix well and marinate for 4 hours or overnight. Cooking the Kebab on stove top 3. Skewer the marinated chicken pieces. 4. Heat butter in a pan. 5. Gently place the chicken skewers and cook for 10 mins. 6. Turn the chicken pieces and cook for another 7 to 8 mins. 7. To get a smokey flavour to the kebab, take a piece of charcoal burn it and place it in a small cup. 8. Turn off the stove, place the charcoal on the chicken kebab and drop the little oil to the charcoal. 9. Close it and let it sit for 2 minutes. 10. Murgh Malai kebab is ready to serve it with mint chutney. Seekh Kebab Ingredients Garlic - 7 no Ginger - 1 no Chopped Green Chili - 2 no Minced meat - 300 gms Chopped Onion - 1 no Coriander powder - 2 tsp Cumin powder - 2 tsp Cayenne powder - 1 tsp Paprika powder - 1 tsp Salt - 1 tsp Chopped mint leaves Chopped coriander leaves Method: 1.For Garlic paste, take 7 cloves of Garlic, 1 pc of Ginger, 2 chopped Green Chili in a Mortar and pestle and crush and grind to a coarse paste. 2. For marination, take a glass jar, add 300 gms of minced meat, 1 chopped onion, coarse paste, 2 tsp of coriander powder, 2 tsp of cumin powder, 1 tsp of cayenne pepper, 1 tsp of paprika powder, 1 tsp of salt, chopped mint & coriander leaves and mix it well together. 3. Cling wrap and let it sit for 2 hours in room temperature. 4. Transfer the minced meat mixture to a blender and pulse it a few times to right consistency. (not too coarse or too fine mixture) 5. Stick the mixture to the skewer stick. 6. Preheat the oven and grill the kebab for 10 minutes on each side. Seekh Kebab is ready to serve. Science: When to Add Salt During Cooking—and Why (It Makes a Huge Difference)

Most recipes (and culinary schools) advise seasoning food with salt early in the cooking process, not just at the end. We decided to investigate this conventional wisdom to see if the timing of seasoning makes a notable difference. Recipe for Roasted Carrots: http://cooks.io/1yxBofN Recipe for Best Beef Stew: http://cooks.io/1yxBsME EXPERIMENT We roasted carrots and prepared beef stew in two ways: For one batch we seasoned the dishes at the very beginning of cooking and, in the case of the beef stew, also when we added the onions. For the other batch we withheld all the measured salt in the recipes and added it at the end. RESULTS The roasted carrot samples were drastically different from one another. Those seasoned before roasting, with 1½ teaspoons of salt, were properly seasoned and flavorful throughout. Meanwhile, the carrots seasoned with the same amount after roasting were seasoned only on their exteriors and also tasted far too salty. When it came to the beef stew, when we salted the meat before cooking (with 1½ teaspoons of salt) and seasoned the onions (with ½ teaspoon of salt) when they went into the pot as directed, the stew and particularly the meat itself were more evenly and deeply seasoned than those in the sample salted only at the finish. Furthermore, as with the carrots, the stew's gravy tasted far too salty when the salt was added at the end. EXPLANATION We know that salt penetrates food slowly when cold. (In a previous experiment, we found that it took 24 hours for salt to diffuse into the center of a refrigerated raw turkey.) While the process is faster during cooking—for example, our science editor noted that the rate of diffusion of salt into meat will double with every 10-degree increase up to the boiling point—it's still not instantaneous. Furthermore, salt penetrates vegetables even more slowly than it does meat (this is because the salt must cross two rigid walls surrounding every plant cell, while the cells in meat contain only one thin wall). Adding salt at the beginning of cooking gives it time to migrate into the pieces of food, seasoning them throughout. Meanwhile, if you add salt only at the end, it provides a more concentrated, superficial coating that immediately hits your tongue. TAKEAWAY For the most even seasoning and well-rounded flavor, we strongly encourage seasoning foods early in the cooking process as we direct in our recipes. However, if you forget, do not make up for it by simply stirring it all in at the end. Instead, start with a very small amount of salt—we used a mere 8 percent of the original amount of salt for the carrots after roasting (⅛ teaspoon versus 1½ teaspoons) and 31 percent for the beef stew (just over ½ teaspoon versus 2 teaspoons)—and then taste and season further as desired. On the flip side, if you are watching your salt intake, you could wait until the end of cooking to season your food, knowing that you'll be able to get away with a lesser amount. Time to get weird in the kitchen with the brothers green . 10 Creative Egg Recipes Egg White Omelette with Plus Yolk Treat - Separate egg yolks. In an oiled pan fry egg whites, once set add yolks on top, fold and enjoy! Egg Noodles -Scramble eggs. In an oiled pan over medium-low heat coat bottom with scrambled eggs. Cover to steam. Once set, roll up egg and cut into noodles. Toss in some tomato sauce for a glorious shakshuka style breakfast pasta! Jamie Oliver Inspired Egg Omelette - Whisk eggs until fluffy, frothy, and light. Heat oil on a nonstick pan and pour eggs. Once the bottom sets fold over. The top may look uncooked but since it's so airy and light it will cook fast. Garnish with some green onions. Deep Fried Poached Eggs - In a deep pot heat oil. Once it's hot crack an egg into the oil, be careful it will splash! Cook for about 30 seconds. Remove and enjoy! Egg on Egg Sandwich - Separate the yolk from 2 eggs. Beat egg whites with a whisk until still peaks form. On a parchment lined cookie sheet scoop egg whites into a bun shape. Bake at 350 until golden. In a pan fry an egg and add remaining 2 yolks. Season with salt and pepper. Put fried egg between baked egg white buns. Enjoy! Steamed Eggs (Ok..ok so messed it up in the video but this recipe works and it's silky and glorious!!) - In a bowl beat 3 eggs. Add 1 cup of water, and 2 teaspoons of salt, and beat again. Pour into a ramekin, or heat safe bowl. In a pot enough water to come up halfway on ramekin. Bring to a boil. Once boiled lower heat, and add ramekins. Cover and let steam for 8-12 minutes. Remove, it will be hot! Garnish with green onion. For even more flavor you could use vegetable or chicken broth in place of water and add a splash of sesame oil! Mmm... Marbled Egg - In a hot pan with oil crack egg and break yolk. Swirl to create a marbled look. Let it still, bottom will crisp up. Once top sets it's done. Add some Sriracha for a yummy kick! Crissomelette - Beat 6 eggs. Butter a hot pan, pour some egg mixture, let it set, and fold in half. On empty side of pan butter again, pour more egg, let it set, and fold onto other side. Repeat until egg mix is gone. Buttery layers of egg! Double Broiler Scrambled Eggs - Heat water in a pan. Place a bowl on top with a pat of butter. Scramble 2 eggs. Once butter is melted add eggs and slowly mix and fold. After about 10 minutes you will have the most tender, delicate eggerts! Enjoy! Watch now: https://www.youtube.com/watch?v=qYiLrPQmcnA We have a rice pilaf recipe that works without fail when made using 1 1/2 cups of rice, but many readers have written us to ask why they end up with an inch of mushy rice on the bottom of the pot when they try to double it. The reason is that, despite what many cookbooks suggest, rice-to-water ratios can’t simply be scaled up proportionally. After running a series of tests, we confirmed that rice absorbs water in a 1:1 ratio, no matter the volume. So in our original rice pilaf recipe, which calls for 1 1/2 cups of rice and 2 1/4 cups of water, the rice absorbed 1 1/2 cups of water. The remaining 3/4 cup of water evaporated. But here’s the catch: The amount of water that evaporates doesn’t double when the amount of rice is doubled. In fact, we found that when cooking a double batch of rice using the same conditions—the same large pot and lid and on the same stove burner over low heat—as we’d used for a single batch, the same quantity of water evaporated: 3/4 cup. Hence, simply doubling the recipe—increasing the amount of rice to 3 cups and the water to 4 1/2 cups—leads to mushy rice because there is an excess of water in the pot. The bottom line: To double our rice pilaf recipe, use 3 cups of rice and only 3 3/4 cups of water. Cut veggies at 6 Minutes and add into pasta and boil for remaining 6 minutes. Strain. Add back into pot with sauce and cook for 1 minute. Put in a bowl top with parmesan and herbs. Egg in a Tortilla Ingredients Egg Tortilla Cheese Sauce - Bite a hole in your tortilla. Put in a pan with oil and fry both sides till crispy. Crack and egg into the hole, sprinkle with salt and pepper, then flip. Sprinkle cheese and drizzle sauce! Chicken Veggie Quesadilla Ingredients Fresh Veggies Meat (I used chicken) Tortilla Cheese - Cut up fresh veggies, cook and add meat. Remove and add tortilla till crispy. Top with veggies, meat, and cheese, fold over and press. Cook 3-5 minutes till crispy and cut. Meatball Parm Sandwich Ingredients Bread Meatballs Mozzarella Sauce - Heat the meatballs. Slice bread open and add fresh mozzarella followed by meatballs and sauce. If you want to add parmesan on top you can. Close the sandwich and press till toasted. Hi everyone! In this video, I take my friend Phoebe zero waste grocery shopping! We will also be making a super easy and delicious (zero waste) vegan lunch with the ingredients we purchase! This is the first video in a series I will be filming with influencers on how to lower waste and live more responsibly. I would consider myself VERY low waste, but have been transitioning to a zero waste lifestyle for a couple of years now. My boyfriend is not zero waste, but has implemented many of the same practices since I began my journey. If you are passionate about conserving, reducing your waste, and reducing the use of single use plastic, the kitchen is a great place to start. Very rarely, I do buy items that are packaged in plastic, but I always check the bottom beforehand to make sure they are recyclable. I am hoping to phase this out entirely by the end of the year. We then thawed half of each steak in the refrigerator overnight and kept the other half frozen. Using our preferred method, we seared both sets of steaks in a hot skillet for 90 seconds per side and then transferred them to a 275-degree oven until they reached 125 degrees, or medium-rare. To track moisture loss, we weighed each steak before and after cooking. RESULTS Not surprisingly, the frozen steaks took longer to finish cooking through in the oven (18 to 22 minutes versus 10 to 15 minutes for the thawed steaks). What was surprising was that the frozen steaks actually browned in the skillet just as well as, and in the same amount of time as, the thawed steaks. Furthermore, they had thinner bands of gray, overcooked meat directly under the crust than the thawed steaks had. We also found that these steaks lost on average 9 percent less moisture during cooking than the thawed steaks did. Sampling the steaks side by side, tasters unanimously preferred the cooked-from-frozen steaks to their thawed counterparts. EXPLANATION A fully frozen steak is extremely cold, which prevents overcooking while the surface reaches the very high temperatures necessary for browning reactions. As for the difference in moisture loss, we know that when meat is cooked to temperatures higher than 140 degrees, its muscle fibers begin to squeeze out a significant amount of moisture. As its slightly thicker gray band indicated, the steak that had been thawed had more overcooking around the edge, so it made sense that it also had greater moisture loss. THE TAKEAWAY While we prefer to start with steak that’s never been frozen for the best texture, if we do have frozen steaks on hand, from now on we’ll cook them straight from the freezer. (But if you can choose between frozen vs. fresh, definitely go for fresh.) Here's what to do for the best frozen steaks: Freeze steaks, uncovered, overnight on a baking sheet (this dries them out to prevent excess splattering during cooking), then wrap them tightly in plastic wrap, place in a zipper-lock bag, and return to freezer. To ensure that the steaks brown evenly, add oil to the skillet until it measures 1/8 inch deep. And because frozen steaks will splatter more during searing, use a large skillet.
